How do I change to format of the date column in File Explorer view to always show only dd/mm/yyyy and not tell me the day of the week?

By default it uses what you configured windows to use. But you can override that in Explorer Panel settings. Under Display tab. and down under the "Date / Time format" section
You can check "Use custom date and time format" It is the same formatting that is use in Windows
